Roasted Roma Tomatoes
Ingredients
- 8 medium roma tomatoes, cut in half, seeds removed. Use a paring knife to cut out the membrane and seeds, use a spoon to scrape out left over seeds
- ¼ cup extra-virgin olive oil
- 4 garlic cloves, minced
- 1 teaspoon chopped fresh parsley
- 1 tablespoon chopped fresh basil
- 1 teaspoon chopped fresh oregano
- Salt and pepper to taste
- ½ cup crumbled feta or smoked gouda cheese
Directions
- Preheat oven to 375 degrees F Sprinkle each tomato with about 1 tablespoon of cheese.
- Mix together the olive oil, garlic, parsley, basil, oregano, salt and pepper in a bowl
- Add tomatoes and work the seasoning into the cavities of the tomatoes
- Place the tomatoes, cut sides up, on a baking sheet
- Sprinkle each tomato with about 1 tablespoon of cheese
- Bake the tomatoes in the preheated oven until cooked but still firm, about 15 minutes
