ROASTED ROMA TOMATOES

Ingredients

  • 8 medium roma tomatoes, cut in half, seeds removed. Use a paring knife to cut out the membrane and seeds, use a spoon to scrape out left over seeds
  • ¼ cup extra-virgin olive oil
  • 4 garlic cloves, minced
  • 1 teaspoon chopped fresh parsley
  • 1 tablespoon chopped fresh basil
  • 1 teaspoon chopped fresh oregano
  • Salt and pepper to taste
  • ½ cup crumbled feta or smoked gouda cheese

Directions

  • Preheat oven to 375 degrees F Sprinkle each tomato with about 1 tablespoon of cheese.
  • Mix together the olive oil, garlic, parsley, basil, oregano, salt and pepper in a bowl
  • Add tomatoes and work the seasoning into the cavities of the tomatoes
  • Place the tomatoes, cut sides up, on a baking sheet
  • Sprinkle each tomato with about 1 tablespoon of cheese
  • Bake the tomatoes in the preheated oven until cooked but still firm, about 15 minutes
