Beet and Blueberry Smoothie


  • 1-2 beets, roasted
  • 3 kiwi, without the skin
  • 2 oranges, juiced
  • 1 banana or avocado
  • 1 cup of blueberries
  • 1 cup of almond milk
  • 1 cup of ice
  • 1 tbsp honey (optional)


  1. Roast the beets at 375 degrees for 35-45 minutes until tender. This can be done that night before or whenever you turn your oven on, then store in the fridge until ready to use.
  2. When making the smoothie, chop up all ingredients and add to the blender.
  3. Blend for 1 minute until smooth.
  4. Pour into a cup and enjoy!
