Roasted Roma Tomatoes
Ingredients
8 medium roma tomatoes, cut in half, seeds removed (use a paring knife to cut out the membrane and seeds, use a spoon to scrape out left over seeds)
¼ cup extra-virgin olive oil
4 garlic cloves, minced
1 teaspoon chopped fresh parsley
1 tablespoon chopped fresh basil
1 teaspoon chopped fresh oregano
Salt and pepper to taste
½ cup crumbled feta or smoked gouda cheese
Directions
Preheat oven to 375 degrees F Sprinkle each tomato with about 1 tablespoon of cheese.
Mix together the olive oil, garlic, parsley, basil, oregano, salt and pepper in a bowl.
Add tomatoes and work the seasoning into the cavities of the tomatoes.
Place the tomatoes, cut sides up, on a baking sheet.
Sprinkle each tomato with about 1 tablespoon of cheese.
Bake the tomatoes in the preheated oven until cooked but still firm, about 15 minutes.
