Oven Roasted Carrots, Potatoes and Baby Broccoli


  • 2 lb red potatoes
  • 1 bunch of orange carrots
  • 1 bunch of baby broccoli
  • 2 Tbsp olive oil
  • 3 cloves of garlic
  • Salt and pepper for seasoning


  1. Preheat oven to 400 degrees. Wash potatoes then dice in half so they’re about a quarter size. If potatoes are running bigger, dice in fourths. Drizzle bottom of pan with 1 Tbsp olive oil and place cut potatoes in an even layer in pan then bake for 20 min. While potatoes are cooking, wash carrots and baby broccoli. Cut up carrots and baby broccoli into about 1 inch pieces. After 20 minutes, take potatoes out of the oven and evenly distribute carrots and baby broccoli in pan. Drizzle remaining olive oil, press garlic cloves, season with salt and pepper, then mix everything together in pan. Put mixture back in the oven for another 20 minutes until everything is cooked through. Take out of oven, let cool for 5-10 minutes, then enjoy!
