Roasted-Garlic Asparagus
Ingredients
- ¼ cup olive oil
- 4 cloves garlic, minced
- ½ tsp onion powder
- 1 Tbsp chopped fresh parsley or 1 tsp dried parsley
- 1 lb asparagus, ends trimmed
- Salt and ground black pepper
Directions
- Preheat oven to 400 F. Line a large jelly-roll pan with parchment paper. Spread asparagus in a single layer on the pan
- Lightly sprinkle with salt and pepper. In a small pot, heat oil, garlic onion powder and parsley on medium-low heat
- Cook 3 minutes until mixture is fragrant but not browned. Drizzle garlic-oil mixture onto asparagus. Roast for 8-10 minutes until the asparagus are bright green. Do not overcook
