Quick Lemon Pesto
Very quick recipe for lemon pesto that you can put on anything!
Ingredients
- 1/8 teaspoon salt
- 2/3 cup firmly packed basil leaves
- 1/4 cup (1 ounce) grated fresh Parmesan cheese
- 2 Tablespoons extra-virgin olive oil
- 2 garlic cloves, peeled
- 1 Tablespoon grated lemon rind
- 1 Tablespoon fresh lemon juice
Directions
- Combine all ingredients in a blender or food processor. Process until finely minced. This pesto is excellent on most any fish or with pasta.
