Quick Lemon Pesto

Very quick recipe for lemon pesto that you can put on anything!

Ingredients

  • 1/8 teaspoon salt
  • 2/3 cup firmly packed basil leaves
  • 1/4 cup (1 ounce) grated fresh Parmesan cheese
  • 2 Tablespoons extra-virgin olive oil
  • 2 garlic cloves, peeled
  • 1 Tablespoon grated lemon rind
  • 1 Tablespoon fresh lemon juice

Directions

  • Combine all ingredients in a blender or food processor. Process until finely minced. This pesto is excellent on most any fish or with pasta.
