A lovely green side dish to go with your St Patrick’s Day dinner, this is a classic European dish
- Fresh English Peas
- 2 Tablespoons butter, divided
- 1 Tablespoon lemon juice
- Salt and pepper
- 1 Tablespoon finely chopped mint, basil or sag (optional)
- Place peas, 1 Tablespoon, and a splash of water in a small saucepan over medium heat. Cook, stirring often, until peas are soft and warm. Remove from heat and mash peas with potato masher or wooden spoon until desired consistency is reached.
- Add lemon juice and remaining butter and mix until butter is incorporated. Season to taste with salt and pepper, adding in herbs if desired. Enjoy!
