Spinach, Sautéed

Ingredients

1 bunch fresh spinach, roots cut off, washed
2 tablespoons olive oil
2 cloves garlic, minced
¼ teaspoon red chili flakes
1 tablespoon freshly squeezed lemon juice
1/8 teaspoon salt
1/8 teaspoon ground black pepper

Directions

Bring a medium size pot of water to a boil. Add spinach and stir for 30 seconds.  Strain in a colander.  Squeeze out excess water.  Reserve spinach.
In a sauté pan over medium-high heat, add olive oil.  Add garlic and chili and cook for approx. 2 minutes, or until garlic just begins to brown.  Add spinach and sauté for 2 minutes.  Add lemon juice, salt and pepper.  Toss and serve immediately.
