Roasted Portobello Caps

Ingredients

  • 2-4 large portobello mushrooms, stems removed
  • 1/8 tsp salt
  • 1/8 tsp ground pepper
  • 1/4 cup plain dry breadcrumbs
  • 2 Tbsp grated Parmesan cheese
  • 1 Tbsp minced fresh parsley or 1 tsp dried
  • 1 Tbsp olive oil

Directions

  1. Preheat oven to 450 degrees F.
  2. Coat a rimmed baking sheet or roasting pan with foil then apply cooking spray.
  3. Place mushroom caps, gill-side up, on prepared pan. Roast until tender, about 20 minutes.
  4. Meanwhile, combine salt, pepper, breadcrumbs, Parmesan, parsley, and oil in a small bowl.
  5. Remove the mushrooms from the oven and top each cap with about 2 tablespoons of the breadcrumb mixture, spreading evenly.
  6. Return to oven and roast until the breadcrumbs are browned, about 5 minutes.
  7. Serve immediately.
