Basil Pesto, Almost Classic

From the Healthy Cook


1/4 cup toasted pine nuts

1/4 cup grated parmesan cheese

1 clove garlic

4 cups basil leaves

4 cups baby spinach leaves 

1/4 cup extra virgin olive oil

1/4 tsp. kosher salt

freshly ground black pepper (to taste)


Put all ingredients into a food processor and pulse until they're uniformly minced and blended together.
