Jalapeño Poppers

From our good friend, Executive Chef Will Gotay, St. Jude Hospital, Fullerton. The following recipe is a healthier way to prepare Jalapeno Poppers. The recipe replaces deep-frying with baking which cuts back on the fat content.


 8 jalapeno peppers – split & seeded
4 large eggs
¾ cup salsa
1 cup grated jack cheese - divided
kosher salt
freshly ground black pepper
8 tortilla chips, crushed fine


Beat the eggs and stir in the salsa, half the jack cheese, and salt and pepper, to taste.
Mix the remaining jack cheese with the crushed tortilla chips.
Fill 16 jalapeno halves ¾ full and top with the jack cheese tortilla mixture.
Baking the poppers…
Preheat the oven to 350 degrees F.
Spray the poppers with any non-stick spray – I recommend the plain or butter flavored spray and bake for 25 to 30 minutes – or until peppers are soft.
