Ingredients

    •  2 zucchini, sliced

    • 1 each, red, green, and yellow peppers, sliced thin
    • 1 small red onion, sliced thin
    • 1 -15 oz can whole baby corn, rinsed
    • 2 medium carrots, sliced thin
Dressing:
  • ¼ cup white vinegar
  • 2 Tablespoons sugar
  • 2 Tablespoons water
  • 2 Tablespoons olive oil
  • 1 teaspoon salt

Directions

  1.  Combine veggies

  2. Mix dressing and pour over veggies
  3. Cover and refrigerate for 2 hours
