Cheesy Tomato Spaghetti Squash


  • spaghetti squash
  • 1/2 – 1 cup sliced goat cheese (or your favorite cheese)
  • 2 tomatoes, sliced in large chunks
  • 1/4 tsp Italian seasoning (or to your liking)
  • basil for garnish


  1. Preheat oven at 400 degrees.
  2. Wash your squash, cut in half and take the seeds out.
  3. Using extra-virgin olive oil-spread lightly on squash, place face down on pan and cook for 30 minutes.
  4. Take out of oven, place cheese, tomatoes and seasoning in cavity and bake for another 15 minutes.
  5. Take out of oven and smash the tomatoes into the cheese then fork the spaghetti squash and mix together.
  6. Add basil and enjoy!
