Build-Your-Own Buddha Bowl

Makes enough for 4 bowls!


  • 1 Delicata squash
  • 1 bunch of gold beets
  • 1 bunch of carrots, shredded
  • 1 bunch of kale
  • 2 cups cooked quinoa (or brown rice as substitute)
  • 1 lb cooked protein of your choice
  • Dressing of your choice


  1. Begin by cooking the gold beets and Delicata squash in the oven at 400 degrees. Depending on the size, the squash should take about 30 minutes and beets about 45 minutes. Once those are done cooking, take out of oven and let cool for 10 minutes.
  2. Once cool, chop up all vegetables, and begin building the bowls.
  3. Start with a base of quinoa in each bowl, then even piles of kale, shredded carrots, squash, and beets.
  4. Top with protein then drizzle with dressing and enjoy!
