Talley Farms Fresh Harvest



  •  4 salmon fillets

  • 2 cups chopped fresh spinach
  • 1 cup sliced mushrooms
  • 1 medium tomato, chopped
  • 1/3 cup sun-dried tomato salad dressing (Newman’s Own is good and it’s lite)


  1.  Place salmon fillets in a baking dish which has been sprayed with a non-stick cooking spray (Smart Balance is good or an olive oil spray is best)

  2. Mix remaining ingredients until well blended, then spoon over the salmon
  3. Bake at 375 degrees F for 20-25 minutes or until he salmon flakes easily with a fork

Wine Pairing:  Salmon and Pinot Noir are a great combination.  Add tomatoes and it’s even better.  I find Chardonnay works best if you want white wine.......Brian Talley
