Baked Nectarines with Cinnamon Honey Sauce


  • 3 nectarines, halved and pitted
  • ¼ cup honey
  • ½ tsp cinnamon
  • ½ tsp vanilla
  • Vanilla Ice Cream (optional)


  1. Make the cinnamon honey sauce. Whisk the honey, cinnamon and vanilla together in a small bowl then set it aside.
  2. Preheat your oven to 350 degrees and spray a baking dish with non-stick cooking spray.
  3. Place the nectarine halves in your prepared dish cut side up. Then pour the sauce over each half filling the center and letting it drip down the sides. (Reserve some sauce for drizzling over the top later, if desired.)
  4. Bake for 25-30 minutes or until the nectarines are soft and the sauce is bubbling.
  5. Top each nectarine half with a scoop of vanilla ice cream and spoon the pan juices (or your reserved sauce) over the top!
