Almost Classic Basil Pesto


  • 1/4 cup toasted pine nuts
  • 1/4 cup grated Parmesan cheese
  • 1 clove garlic
  • 4 cups basil leaves
  • 4 cups baby spinach leaves
  • 1/4 cup extra virgin olive oil
  • 1/4 tsp. kosher salt, freshly ground black pepper (to taste)


  1. Put all ingredients into a food processor and pulse until they’re uniformly minced and blended together.
