Zucchini Romano
Ingredients
- 1 lb medium zucchini, sliced ½ inch thick
- 2 eggs
- 1/3 cup flour
- ½ tsp salt
- ¾ cup olive oil
- ¾ lb. Mozzarella cheese, sliced
- 1/3 cup buttered toasted breadcrumbs
- 2 cups marinara sauce
- 1/3 cup grated Romano cheese

Preheat oven In a medium sized bowl, beat eggs, flour and salt. Dip zucchini in batter, shaking off excess.
Fry zucchini a few slices at a time in hot oil in large skillet until lightly browned on both sides.

Arrange in large baking dish, overlapping slices if necessary. Place 1 slice Mozzarella on several zucchini slices; sprinkle with breadcrumbs. Cover with sauce, sprinkle with Romano cheese.
Bake at 350 F. oven for 25 - 30 minutes.
