Zucchini Romano


  • 1 lb medium zucchini, sliced ½ inch thick
  • 2 eggs
  • 1/3 cup flour
  • ½ tsp salt
  • ¾ cup olive oil
  • ¾ lb. Mozzarella cheese, sliced
  • 1/3 cup buttered toasted breadcrumbs
  • 2 cups marinara sauce
  • 1/3 cup grated Romano cheese


  • Preheat oven In a medium sized bowl, beat eggs, flour and salt. Dip zucchini in batter, shaking off excess.
    Fry zucchini a few slices at a time in hot oil in large skillet until lightly browned on both sides.
  • Arrange in large baking dish, overlapping slices if necessary. Place 1 slice Mozzarella on several zucchini slices; sprinkle with breadcrumbs. Cover with sauce, sprinkle with Romano cheese.
    Bake at 350 F. oven for 25 - 30 minutes.
