Maple Cinnamon Roasted Delicata Squash


  • 1 large delicata squash or 2 medium
  • 1 1/2 Tbsp avocado oil or cinnamon olive oil
  • 1 1/2 Tbsp pure maple syrup
  • 1/4 tsp sea salt, to taste
  • 1/4 tsp ground cinnamon


  • Preheat the oven to 425 degrees F.
    Trim the tip and tail off of the delicata squash, then slice it open lengthwise. Use a spoon to scoop out the innards, then cut the squash into ¼ to ½-inch thick slices. Lay delicata slices on a baking sheet and drizzle with avocado oil and sea salt. Use your hands to toss everything together until it is well-coated in oil. Bake on the center rack of the preheated oven for 15 minutes. Flip the squash, then roast another 10 to 15 minutes, until golden-brown and cooked through.
  • Transfer squash to a serving bowl or plate and drizzle with pure maple syrup, sprinkle with cinnamon and sea salt more sea salt to taste. Serve and enjoy!

  • Note: You can eat the skin of a Delicata!!
