Holiday Inspired Brussels Sprouts

Ingredients

  • 1 lb of brussels sprouts-trim stem ends
  • 1 pomegranate- quartered and seeded
  • ½ cup crumbled blue cheese
  • ½ cup of chopped walnuts
  • Balsamic vinegar for drizzling
  • Olive oil for drizzling

Directions

  1. Preheat air fryer to 375 degrees for 20 minutes. Once temperature is reached, put whole brussels sprouts into air fryer and drizzle with olive oil. Cook in air fryer for 10 minutes, then take out and drizzle with balsamic vinegar. Then put back into the air fryer for another 7-10 minutes, or until reached desired crispiness.
  2. While brussels sprouts are cooking, cut open a pomegranate and remove seeds into a mixing bowl.
  3. Once the brussels sprouts are done cooking, put them into the bowl with the pomegranate seeds, then add blue cheese, chopped walnuts, another drizzle of balsamic vinegar, and mix all together. Enjoy!
  4. (Can also be cooked in oven if you don’t have an air fryer.)
  5. *goat cheese is a good substitute for blue cheese in this recipe
  6. To seed a pomegranate- cut the top off and then cut them in the quarters and pluck out the seeds.
