Easy Roasted Red Potatoes

Ingredients
- 2 lbs small red potatoes. If larger, slice in 1 inch pieces
- 1/3 - 1/2 cup onion soup mix (see homemade onion mix recipe)
- 4 Tbsp olive oil (try garlic or rosemary olive oil)
Dry Onion Soup Mix (makes 1/2 cup)
- 1/2 cup dried onion flakes
- 1 tsp onion powder
- 1 tsp garlic powder
- 1/2 tsp celery seed or flakes
- 1/2 tsp pepper
- 1 tsp dried parsley
- 1 tsp salt
Directions
- Preheat oven to 450 degrees. Mix olive oil and spices in a large bowl. Add potatoes and mix well. Pour potatoes onto a large roasting pan and bake about 20 - 30 minutes, stirring once, until potatoes are soft or crispy depending on how you like them. Serve immediately. These many turn out a bit dry. You can serve with butter or mix them with olive oil before serving.
- For Dry Onion Soup Mix: Mix together. Store in an air tight container. Yields 2 packets of commercial dried onion soup mix or 1/2 cup
