Buffalo Cauliflower Steaks with Blue Cheese Coleslaw

Ingredients

Buffalo Cauliflower

  • 1 large head cauliflower
  • 1/2 cup buffalo sauce
  • salt and pepper

Blue Cheese Coleslaw

  • 3 cups coleslaw mix
  • 1/4 cup Greek yogurt blue cheese dressing or your favorite blue cheese dressing
  • 2 Tbsp finely chopped fresh parsley
  • 1 Tbsp minced red onion
  • salt and pepper

Directions

Buffalo Cauliflower

  1. Preheat oven to 400°F convection (or 425°F if you don’t have a convection setting) Line a baking sheet with parchment paper.
  2. Slice the cauliflower from top down to the bottom/core in 1 inch slices. You should end up with 3-4 “steaks” from the center of the cauliflower. Place cauliflower steaks on the parchment paper and brush both sides with the buffalo sauce. (*see note)
  3. Season with salt and pepper.
  4. Roast for 20 minutes, carefully flipping half way through.
  5. Transfer to a plate and serve with blue cheese coleslaw.

Blue Cheese Coleslaw

  1. Combine all ingredients in a small bowl and mix until well combined.
