Slow Cooker Sausage, Potato, and Leek Soup

Ingredients

  • 1 lb. ground sausage
  • 2 lb. red potatoes
  • 1 bunch leeks
  • 2 ribs celery
  • 2 carrots
  • 1 cup frozen corn
  • 6 cups chicken broth
  • ½ cup heavy whipping cream
  • 2 Tbsp garlic powder
  • Salt and pepper to taste

Directions

  1. Turn crockpot on for 8 hours on low.
  2. Dice red potatoes into quarters then add into crockpot.
  3. Chop up leeks, celery, and carrots, then put into crockpot.
  4. Season with garlic power, salt, and pepper, then pour in chicken broth and cook on low for 7 hours.
  5. Before the last hour of cooking, brown ground sausage.
  6. Add cooked sausage, frozen corn, and whipping cream to the crockpot for the last hour.
  7. After 8 hours, spoon into bowl and enjoy with toppings like chives, shredded cheese, bacon bits, or sour cream!
