Sarah’s Chinese Napa Cabbage Salad

Ingredients

Dressing

  • 1 cup vegetable oil (not olive oil)
  • 4 Tablespoons sugar
  • 6 Tablespoons seasoned rice vinegar
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 packet seasoning from Top Ramen Noodles
  • 1 cup slivered almonds, toasted

Salad

  • 1 head Napa cabbage, chopped
  • 1 bunch green onions, sliced
  • 1/4 cup cilantro, chopped (or more to taste)
  • 3/4 lb. snap peas (optional)
  • 2 packs Top Ramen Noodles (packets reserved) uncooked

Directions

  1. For dressing: combine ingredients and whisk until blended.
  2. For salad: combine all items and toss.
  3. Pour dressing over salad and mix at least 1/2 hour before serving. Refrigerate until served.
