Russian Beet Salad

Ingredients

  • 1/3 medium red cabbage, thinly sliced (about 1 cup)
  • 1 medium beet, boiled, peeled and then grated (about 1 cup)
  • 1 cup fresh English peas, raw or lightly boiled
  • 3 medium carrots, grated (about 1 cup)
  • 1 medium potato, peeled and grated
  • 1/4 cup onion, finely diced
  • 1 clove garlic, minced
  • 1/2 to 3/4 cup mayo
  • Salt and Pepper to taste

Directions

  • Heat some olive oil in a saute pan over medium heat. When hot, add grated potato and fry until golden brown. When finished, place them on a paper towel to cool.
  • Mince 1 clove of garlic and mix with 1/2 cup of mayo.
  • Put all ingredients in a large bowl and mix. Add in dressing and toss. Enjoy!
