Napa Cabbage Fruit and Veggie Slaw with Greek Yogurt and Key Lime Juice Dressing

Ingredients

Dressing

  • 1 cup fat free Greek yogurt
  • One handful fresh cilantro, finely chopped
  • 2-3 tablespoons key lime juice (Nellie & Joes brand
  • Key West Lime Juice found at Cal Fresh Market)
  • Sprinkle of sugar or honey or other sweetener to taste

Salad

  • 1/2 head of Napa Cabbage, chopped
  • 2 cups any fruit and veggies, chopped into bite size pieces
  • Almonds, roasted and chopped

Directions

  1. For dressing: combine all ingredients and mix until blended.
  2. To roast almonds (if they aren’t already): bake on cookie sheet at 350 degrees for 10-15 minutes.
  3. Fruit and veggie options for slaw: apples, oranges, kiwi, banana, dried cherries, cranberries, carrots, celery, fresh peas, corn, etc. (not tomatoes or strong acidic flavors).
  4. Cut up and mix the slaw and other salad items about an hour before the meal. Add the dressing up to 30 minutes before to coat all the salad. Let it sit in fridge until meal time to absorb all the veggie and fruit flavors.
