Mrs. Stovall’s Colorful Salad

Ingredients

Dressing

  • 1/4 cup white vinegar
  • 2 Tablespoons sugar
  • 2 Tablespoons water
  • 2 Tablespoons olive oil
  • 1 teaspoon salt

Salad

  • 2 zucchini, sliced
  • 1 each, red, green, and yellow peppers, sliced thin
  • 1 small red onion, sliced thin
  • 1 15 oz can whole baby corn, rinsed
  • 2 medium carrots, sliced thin

Directions

  1. Combine dressing ingredients.
  2. Mix salad veggies together. Top with dressing.
  3. Cover and refrigerate for 2 hours.
