Chicken and Peppers

Ingredients

  • ¼ cup soy sauce
  • ¼ sherry
  • 2 teaspoons ground ginger
  • 1 lb boneless, skinless chicken breast, cut into 1 inch slices
  • 2 tablespoons olive oil
  • 1 cup chopped onions
  • 2 cloves garlic, crushed
  • 3 bell peppers, sliced
  • ½ cup water

Directions

  1. In a medium bowl, combine soy sauce, sherry, ginger and chicken. Marinate several hours in the refrigerator.
  2. In a large skillet, heat oil over medium heat. Add onions and garlic. Cook 3 minutes, stirring frequently.
  3. Add peppers. Cook 3 minutes.
  4. Add chicken and marinade. Cook, stirring frequently, until chicken loses its pink color.
  5. Reduce heat to low. Add water, cover and cook 15 minutes, stirring occasionally.
