Andrea's Taco Salad with Peppers & Tofu (or Chicken)

Ingredients

Spices

  • 1 1/2 tsp paprika
  • 1 tsp ancho chile
  • 3/4 tsp cumin
  • 1/4 tsp oregano
  • 1/16 tsp cayenne pepper
  • 3/4 tsp salt

Taco Meat

  • 1 -2 sweet peppers, chopped
  • 1 medium onion, chopped
  • 2 cloves garlic, chopped
  • 1 lb firm tofu (or 1 lb chicken)
  • 1 cup salsa
  • Extra: 1 lb sweet peppers

Directions

  • Mix spices together in a small bowl.
  • Cook pepper, onion, and garlic in good olive oil in a large frying pan for 2-3 minutes. If using tofu, press out extra moisture and break into small pieces in a bowl. Mix in spices thoroughly and add to pan. If using chicken, add directly to pan and cook, adding spices. Mix together and cook through until tofu or meat are done. Add salsa. Mix well and let simmer for 15 minutes to blend flavors.
  • Sliced lengthwise 1 lb. of sweet peppers. Heat olive oil in a frying pan. Sauté until softened. Make lettuce bowls with anything else you want in your salad (avocado, tomatoes, fruit, etc.) Add peppers on top. Add taco meat, warm brown rice (optional), cheese, smashed tortilla chips. Chipotle salad dressing goes great on top!
