Jalapeño Poppers

The following recipe is a healthier way to prepare Jalapeno Poppers. The recipe replaces deep-frying with baking which cuts back on the fat content.

Jalapeño Poppers


  • 8 jalapeno peppers - split & seeded
  • 4 large eggs
  • 3/4 cup salsa
  • 1 cup grated jack cheese - divided
  • kosher salt
  • freshly ground black pepper
  • 8 tortilla chips, crushed fine


  • Beat the eggs and stir in the salsa, half the jack cheese, and salt and pepper, to taste.
    Mix the remaining jack cheese with the crushed tortilla chips.
    Fill 16 jalapeño halves 3/4 full and top with the jack cheese tortilla mixture.

    Preheat the oven to 350°F.
    Spray the poppers with any non-stick spray. I recommend the plain or butter flavored spray and bake for 25 to 30 minutes or until peppers are soft.
